Cake… for breakfast!

Overnight oats are one of my favorite go-to breakfasts. So simple, so versatile and jam packed with nutrients, fiber and protein. They can even make cake (carrot cake in this case) healthy and nutritious – here’s how:

  1. Mix 1 cup of oats with 1.5 cups of almond milk (or whatever type of milk you prefer), along with 2 tbps of chia seeds.
  2. 1. Add in 1/4 cup of grated carrots, 1/2 tsp of vanilla extract, 1 tsp cinnamon and 1/2 tbsp of maple syrup (depending on how sweet you like it).
  3. Top it off with some shredded coconut and crushed up walnuts.
  4. Let the mixture set in the fridge overnight and wake up to a delicious breakfast!

Because doesn’t everyone love the idea of cake for breakfast?
