Overnight oats are one of my favorite go-to breakfasts. So simple, so versatile and jam packed with nutrients, fiber and protein. They can even make cake (carrot cake in this case) healthy and nutritious – here’s how:
- Mix 1 cup of oats with 1.5 cups of almond milk (or whatever type of milk you prefer), along with 2 tbps of chia seeds.
- 1. Add in 1/4 cup of grated carrots, 1/2 tsp of vanilla extract, 1 tsp cinnamon and 1/2 tbsp of maple syrup (depending on how sweet you like it).
- Top it off with some shredded coconut and crushed up walnuts.
- Let the mixture set in the fridge overnight and wake up to a delicious breakfast!
Because doesn’t everyone love the idea of cake for breakfast?
