Healthy Guac & Sweet Potato Chips!

It’s safe to say that guac is a crowd pleaser. I love having it around the house to snack on, and it’s also a great side dish to bring to parties. Sure you can easily head to Trader Joe’s or Whole Foods and pick up some chips and dip, but they’re usually full of chemicals and preservatives. This recipe only calls for a handful of super simple and healthy ingredients so you can indulge without the guilt 🙂

What you’ll need:

  1. 1 Japanese sweet potato, sliced up
  2. 2-3 ripe avocados
  3. 1 clove of minced garlic
  4. 10 sliced cherry tomatoes
  5. juice from half a lemon
  6. salt and cayenne pepper to taste

To make it:

  1. Heat up your oven to 375 degrees
  2. Toss sweet potato in a bowl with olive oil and place on a baking sheet in the oven for 30 mins, flipping the chips half way through
  3. In a separate bowl, slice up and mash avocado
  4. Add in tomatoes, and garlic and mix
  5. Add in salt, pepper, a dash of cayenne and lemon juice and mix (tip: save some lemon juice to pour over top so that it stays fresh longer since avocados brown easily!)
