Date & Blueberry Energy Bites

Who doesn’t love energy bites? They’re filling yet super healthy (and did I mention super simple to make?).  I love prepping these on Sundays. That way my snacks are covered for the week!  For some reason I also love freezing them – they end up having an ice cream-like consistency, which definitely fulfills my sweet cravings after meals.

What you’ll need (makes 12):

  1. 15-20 pitted medjool dates
  2. 1 cup walnuts
  3. 1/2 cup almonds
  4. 1/2 cup frozen blueberries
  5. 1 tbsp almond butter
  6. Coconut shavings, matcha powder & spirulina powder

How to make them:

  1. Soak dates in warm water for 10 minutes
  2. Mix dates, walnuts, almonds, frozen blueberries and almond butter in a food processor on high for 2-5 mins, until desired consistency is reached
  3. Form into balls with hands and roll in coconut/ matcha powder/ spirulina
  4. Place in freezer for at least 1 hour, and enjoy as a frozen treat! (you can also keep these in the fridge if you prefer them not to be frozen)
