7 ingredient almond butter & chickpea cookies!

Sure, chickpeas might not be the first thing that pops up when you think about delicious cookies but these will change your mind! They’re crunchy on the outside and super gooey on the inside – not to mention healthy, guilt-free and full of protein from the chickpeas and almond butter. I promise you they’re as delicious as they look – just give them a try!

What you’ll need (makes 12-15 cookies):

  1. small can of chickpeas, rinsed, drained and patted dry
  2. 1/2 cup gluten free oat flour
  3. 1/2 cup coconut sugar
  4. 1/2 tsp vanilla extract
  5. 1/2 tsp baking soda
  6. 3 tbsp coconut oil
  7. 1/4 cup almond butter

How to make them:

  1. Pre-heat oven to 350 degrees
  2. Line a baking sheet with parchment paper (+ drizzle some leftover coconut oil so that the cookies don’t stick!)
  3. Mix chickpeas, oat flour, coconut sugar and coconut oil in a food processor on high
  4. Add in vanilla extract, baking soda, and almond butter on high until well mixed
  5. Form into shapes with your hands and place onto baking sheet
  6. Place in oven for 15-20 mins, or until golden brown and firm on the outside
  7. Remove from oven, let cool for 10 mins (if you can wait that long), and enjoy!
