Mango Banana “Ice-cream” Bites

I don’t know about you guys, but I always crave something sweet after a meal. I’m constantly looking for healthier alternatives to traditional desserts, and that’s how I came up with these mango banana “ice cream” bites. This dessert is dairy-free, gluten-free, made almost entirely out of fruits and nuts and basically a total game-changer. You might never need to buy ice-cream from the grocery store again 😉 Check out the recipe below!

What you’ll need:

For the crust:

  1. 1 cup dates or figs
  2. 3/4 cup almonds
  3. 1 tsp chia seeds
  4. 1 tbsp almond butter

For the “ice cream”:

  1. 1 cup frozen mango cubes (or fresh – but frozen creates a better consistency)
  2. 1 cup frozen banana slices
  3. 1/2 cup almond milk
  4. optional: 1 tsp honey for added sweetness

How to make it:

  1. Soak dates (or figs) in luke warm water for 10 mins;
  2. Mix dates with almonds and almond butter in a food processor;
  3. Oil a pan with coconut oil;
  4. Add crust mixture to pan and let set in freezer for 20-30 mins;
  5. Mix mango, banana and almond milk in a food processor, add to pan and let set in freezer for 2-3 hours (or overnight);
  6. Remove from freezer about 10-15 minutes before eating to let it thaw slightly.
