Gluten-free matcha “shortbread” cookies

I would say that there’s nothing better than shortbread cookies, but this gluten-free, matcha version might just take the cake (or cookie, in this case 😉 ). I usually stay away from shortbread cookies since they are essentially made up of butter and refined sugar, but this recipe calls for almond butter and maple syrup instead – so they’re basically a health food, right?! Read on below for the recipe!

What you’ll need:

  1. 1-2 tbsp matcha (depending on how much matcha flavour you want)
  2. 1 cup coconut flour
  3. 2 tbsp almond butter
  4. 1 egg
  5. 1 tbsp chia seeds
  6. 1/2 cup almond milk
  7. 1-2 tbsp maple syrup or honey

How to make them:

  1. Pre-heat your oven to 375 degrees & line a baking sheet with parchment paper;
  2. In a bowl, mix matcha powder and coconut flour;
  3. In a separate bowl, mix egg, honey, almond milk, chia seeds & almond butter;
  4. Add in dry ingredients slowly, and mix together;
  5. Form into small cookies with your hands & set onto a baking sheet;
  6. Bake in oven for 15-20 mins;
  7. Remove from the oven, let cool for 10 mins and enjoy!
